In the Oven, But Not Quite Done

At my main blog, Eileen on Him ... at least, I try!, I often have a recipe or two that I've really enjoyed, but because that's not what my blog is really about, the recipes get lost in the shuffle.

I've decided to see if keeping a separate cooking blog would help me organize and keep track of my favorite recipes, along with posting meal plans, thoughts on health & nutrition, food & spirituality, kitchen-related organization and frugality, stuff like that.

A quick note on the title: When my brothers & sisters and I were kids, any time we asked my mom what was for dinner, she'd say, "Loblollies for lieover. Would you like a lick?" When I decided to set up this blog, the title was a given! :)

I already have lots of recipes I'm excited to begin posting:
  • Home-made, deliciously thick fat free yogurt, prepared using my crockpot, a heating pad and a couple of old bath towels -- with times keyed to dinner prep and bedtime routines to make it super-easy to pull off! I make it in half-gallon batches. We don't mess around here.
  • Peanut butter, in 40 oz batches (perfect for my old Jif peanut butter jars!) -- lasts about 2 weeks in our house. You can control for the added fat, salt and sugar (in this case, honey) content yourself. I think we've come up with the perfect recipe -- and it's delicious!
  • A super-easy ice cream cake, made with sundae toppings and ice cream sandwiches. Mmm, so good -- and really pretty, too!
  • My favorite home-made pizza dough, adapted for individual make-your-own prebaked crusts, as well as full-sized, dough-to-toppings-to-oven style. I've even adapted it to make it more like Pizza Hut crust, when that's what we're hankerin' for! You'll love it.
  • No-fail pancakes that your kids will love to help you make -- so good, you'll never go back to Bisquick!
  • Green Chicken Lasagna -- as in the color green -- it's greener than Ireland, and it's awesome!
  • A Basil & Onion Foccacia that is absolutely to die for.

I'm thinking of transporting some of my favorite recipes hiding in the archives of my other blog, too -- the lava cakes we made while studying volcanos, my adventures in trying to mimick my mom's best-ever flaky & delicious pie crusts, the fun I've had making Artisan Bread in 5 minutes a day. I even have a post on making the most of cooking with kids that I think could be right up this blog's alley.

Of course, with three young children and a homeschool schedule, I have a hard time posting on a regular basis no matter what the topic, so who knows how quickly I'll pull this much together, let alone keep updating with new posts. But I'm excited to try -- so for now at least, the outlook for this blog is pretty hopeful! :)
